Dans les régions riveraines du Narcea et du Nalón, où il est le plus répandu, la dénomination Afuega'l Pitu désignait un ensemble de fromages présentant des caractéristiques et des propriétés assez hétérogènes, sur le plan tant de la forme que de la durée de maturation ou de la saveur.
A range of cheeses with fairly similar characteristics in terms of shape, maturing times and flavour were known as Afuega'l Pitu in the municipalities along the Rivers Narcea and Nalón, where the cheeses are most commonly found.

More recently, in their work Asturias, Octavio Bellmunt and Fermín Canella again stress how widespread the cheeses are, describing them as ‘those common everywhere and called afuega el pitu or other names’.

En l'absence de témoignages antérieurs, le fromage Afuega'l Pitu est mentionné dans des documents écrits remontant au moins au XVIIIe siècle comme monnaie de paiement des impôts, mais sous la dénomination quesu de puñu ou fromage d'Afueg'l Pitu jusqu'au XIXe siècle. Félix Aramburu y Zuloaga le définit, à la fin de ce même siècle, comme le «fromage de puñu ou d'afuega el pitu que l'on trouve couramment dans presque toutes les communes des Asturies».
There are written references to the cheese (referred to as quesu de puñu or queso de Afueg'l Pitu) dating back to at least the 18th century, where it is described as a currency for paying taxes (the practice until into the following century). At the end of the 19th century, Félix Aramburu y Zuloaga describes the cheese as ‘the primitive queso de puñu or de afuega el pitu which is common in almost all the municipalities of Asturias’.

Littéralement, «Afuega'l Pitu» signifie en français «étouffer le poulet», curieuse dénomination qui a donné lieu à de multiples interprétations: de l'allusion à l'étranglement du collet du sac (fardela) où il est égoutté aux difficultés à l'ingérer dans certains cas, en passant par son utilisation traditionnelle comme aliment dans l'élevage des poulets.
Translated literally, ‘Afuega'l Pitu’ means ‘choke the chicken’ — a strange name for which numerous interpretations have been found. These range from the name's being a reference to strangling the neck of the bag (fardela) in which the cheese is drained, to the occasional difficulties encountered in swallowing the cheese, and even to its having traditionally been used as feed for chickens.
