Le 3 octobre 2011, l’Autorité européenne de sécurité des aliments (EFSA) a adopté un avis scientifique sur les dangers pour la santé publique à prendre en compte lors de l’inspection des viandes (porcines) , dans lequel elle a conclu que les palpations et les incisions actuellement requises dans le cadre de l’inspection post mortem présentaient un risque de contamination croisée associé à des dangers bactériens.
The European Food Safety Authority (EFSA) adopted on 3 October 2011 a Scientific Opinion on the public health hazards to be covered by inspection of meat (swine) , which concluded that the currently required palpations and incisions in post-mortem inspection, involve a risk of cross contamination with bacterial hazards.

L’EFSA a également conclu qu’il convenait de ne pas procéder à la palpation ou à l’incision effectuée dans le cadre de la procédure actuelle d’inspection post mortem des porcs soumis à un abattage normal, car le risque de contamination croisée microbienne est plus élevé que le risque lié à la détection potentiellement réduite des affections ciblées par ces techniques.
EFSA also concluded that palpation or incisions used in current post-mortem inspection should be omitted in pigs subjected to routine slaughter, because the risk of microbial cross-contamination is higher than the risk associated with potentially reduced detection of conditions targeted by those techniques.
